This exceptional Mexican microlot originates from Ixhuatlán del Café, a municipality in the central mountainous region of Veracruz whose name translates from Nahuatl as the "place among green corn leaves." Nestled between 800 and 1,900 meters above sea level, the coffee is grown in a temperate-humid climate by a community of certified producers, including many women-led farms supported by the "Women Cultivating Quality" initiative. What sets this particular lot apart is its specialized Yeast-Washed processing; while traditional Mexican washed coffees typically undergo a standard fermentation, this selection utilizes specific yeast strains to enhance its profile before being dried on patios or in mechanical dryers. This focus on innovative processing is part of a larger movement in the region toward regenerative agriculture and sustainable practices, such as the use of organic fertilizers and high-diversity shade management.
The resulting cup offers a sophisticated and comforting tasting experience characterized by a mellow, fruit-like sweetness and winey acidity. The palate is anchored by rich, smooth notes of Milk Chocolate and the deep, aromatic sweetness of Kahlua.
